
The Evolution of
Zoe Coffee & Kitchen
We've always loved coffee. Well, maybe not always. We'd sworn off coffee because it hurt
Mike's stomach and Terry couldn't bring herself to drink another cup of MJB. But then we
discovered a young Starbuck's and our world changed. We savored coffee, studied coffee,
and had dreams of opening our own coffee shop.
When an opportunity arose to open a coffee
shop on the corner of TerreView and Merman Drive in Pullman, we took it. We had spent a lot
of time and money visiting roasters and coffee shops throughout the Pacific Northwest, while
hosting blind cupping events with friends, to learn the coffee business. We made the right
decision choosing Caffe D'arte as our coffee roaster: a smooth, rich flavor that is neither burnt
or bitter. We opened the doors of this first location in February 2006 for coffee, gourmet hand-crafted
sandwiches, burgers and desserts.
Two years later, we were asked to open another coffee shop in the Interfaith House on the
WSU campus, right next to the former Bookie. To better serve the WSU Community we sold
the original Zoe location in 2010. We centered all of our efforts on providing a safe and
popular venue where students, staff and faculty felt free to hangout, study, or enjoy live
entertainment while enjoying great food with delicious microbrews and coffee in an idyllic
setting.
The shop was incredibly well received, was affectionately dubbed “Zoe Underground”
by students, and received the ASWSU Student Choice Award for Best Coffee Shop in Pullman
for several years. We loved our campus location and we loved serving the students, staff and
faculty of WSU. When the building owners sold it we lost our location, but then a wonderful
opportunity arose right in our own backyard.
We had the good fortune to purchase Pullman's well-known and loved Tam's Place from our
wonderful neighbors, the Shermer's. We dove headfirst into a full-fledged restaurant business
doing what any sane person would never have done: remodeling the restaurant at night,
cleaning it up, and re-opening its doors every morning, all the while learning and developing a
new business model.
In addition to breakfast and lunch, we opened the espresso drive-thru, a
cocktail bar and brought in a dinner menu. Now we are pleased to say, “Breakfast, Lunch and
Dinner are Served!” It's been an adventure! The restaurant has developed its own new flavor;
a pinch of the old Zoe Underground from campus, and a dash of the new 1005 Main location.
We're so happy and pleased with this new vibe!
As two WSU graduates (Go Cougs!) who have raised four children in this amazing small town
of Pullman, we're delighted to have now been providing award winning coffees, delicious food
and tasty beverages to WSU and the Pullman community for these many years.
We're incredibly grateful for our employees and for you our wonderful guests who come in our doors
every day. Our continuing goal is to provide you with outstanding food and service. As the
new “Zoe Coffee & Kitchen” we look forward to serving you the best for many more years to
come!
